Blackberry Yogurt Popsicles
/Isn't it amazing how summer feels so long ago already? Even though school JUST started, those lazy summer days get so quickly replaced by hectic mornings, weekend soccer practices, and back to school event... after event... after event. This recipe is my TAKE ME BACK TO SUMMER scream. These popsicles are the perfect cool and refreshing treat for the days when it still feels like August. But they also contain a hint of cinnamon that signals that crisper air is upon us. You can make these with fresh blackberries that are in season throughout September (more on that here) or use frozen ones. Naturally sweetened with only fruit, this recipe is high in vitamin C and calcium from the yogurt.
You could also add in a cup of milk or juice to make this a delicious smoothie--perfect to pour into a to-go cup and take for breakfast on the mornings you don't have time to sit down and eat. Blackberry-Yogurt Popsicles makes 9 popsicles (my molds fit 1/3 cup liquid each) Ingredients: 1 cup fresh or frozen blackberries 1 cup plain full fat yogurt 1 banana 1/4 teaspoon cinnamon
Directions: Combine all ingredients in a high-powered blender, and blend until smooth. Pour into ice pop molds and freeze until firm, at least 4 hours. Popsicles will last in the freezer for up to three months.
