Blackberry Balsamic Vinaigrette
Ingredients:
1 cup fresh or frozen (and defrosted) blackberries
2 tbsp. Balsamic vinegar
3 tbsp. olive oil
1 tbsp. honey or maple syrup
½ tsp. Dijon mustard
salt and pepper to taste
Directions:
Add all ingredients to a food processor or blender, and blend until smooth well. If dressing is too thick, you can thin it with a few drops of water. Store in refrigerator for up to one week.
